chocolate tapioca pudding

Here’s a simple recipe for this decadent yet relatively healthy chocolate tapioca pudding!

  • 1/4 cup tapioca pearls (soaked in 1 cup water for 1 hour, then drained)
  • 1 1/2 cups almond milk
  • 1/4 cup maple syrup
  • 1/4 cup cocoa
  • 1/4 teaspoon vanilla

Combine all ingredients in a saucepan and stir over medium heat until pudding thickens. Transfer to serving dishes and chill. Makes 3-4 servings.

  1. The hardest part is waiting for it to be ready. I’ve never had chocolate tapioca pudding, but I sure do love regular tapioca, so, why not with chocolate? Our cat, Bill, who was lactose intolerant, couldn’t control himself whenever we made tapioca pudding. He was obsessed with getting a taste and would start meowing and trying to reach the stove. Poor, guy. Then, when we would be sitting on the couch eating it, he would jump up and try to get a paw or his head in our dishes. Otherwise, he was quite the gentleman.

    • i had never had chocolate tapioca pudding either – i don’t know why it’s not as popular as vanilla! i enjoyed your story about bill. this pudding would have been perfect for him since there’s no lactose.

    • thanks, mom! we used up our ny maple syrup already! this maple syrup was a favor from a friend’s wedding – i think it was from new hampshire.
