amazing chocolate mint cake!

I wanted to bake something yesterday, but I didn’t feel like expending a lot of effort and didn’t have any soymilk to spare. Not very promising circumstances, yet I found the perfect recipe for the occasion and was able to bake 18 delicious chocolate mint cupcakes! Check out this recipe…I’m amazed that I could make such yummy cupcakes with so few ingredients!

Adapted slightly from a recipe from Compassion Over Killing:

  • 2 1/4 cups flour
  • 5 tablespoons cocoa powder
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons baking soda
  • 1/2 cup vegetable oil
  • 1 1/2 cups cold water
  • 1 1/2 tablespoons cider vinegar
  • 1 teaspoon vanilla extract
  • 1 teaspoon mint extract

Preheat oven to 350ºF. Line a cupcake pan with cupcake papers. Mix together the dry ingredients. Then add wet ingredients and mix some more. Fill cupcake liners 2/3 full and bake for 15-20 minutes. Allow to cool and frost however you like! Yum!
