Well, I wasn’t sure if I should share this recipe with the world, because these vegan no-bake cookies are dangerously addictive if you like sugar and peanut butter! I’ve been making them for at least 8 years now and I don’t know where I found the recipe, but I call them trash cookies because I made them shortly after seeing this epsisode of The Simpsons (go to 17:37 for the trash cookies moment) and they aren’t very pretty cookies. They are crazy delicious though!
Here’s the recipe:
- 1/4 cup Earth Balance
- 2 cups sugar
- 1/2 cup soy milk
- 3 cups oats
- 5 tablespoons peanut butter
- 1 teaspoon vanilla
Line a cookie sheet with foil or waxed paper.
Melt the Earth Balance in a large saucepan over low heat. Add the sugar and soy milk, and increase the heat to medium. Bring the mixture to a boil for 1 minute. Remove from the heat. Add the oats, peanut butter, and vanilla. Mix vigorously.
Drop the mixture by spoonfuls onto the cookie sheet and let stand until firm.
Makes 2 to 3 dozen cookies.
