apple cider muffins

One of my favorite things about fall is the apple and pumpkin baked goods that it brings! I loooove a good apple cider donut, but I can’t bring myself to deep-fry anything, so I decided to make apple cider muffins instead. They smelled absolutely amazing while they were baking, and are quite tasty!

  • 1 3/4 cups flour
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • sprinkle of nutmeg
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup applesauce
  • 3/4 cup apple cider
  • 1/4 cup vegetable oil

Preheat oven to 400ºF. Mix the dry ingredients together in a large bowl. In a second bowl, mix the wet ingredients together. Then add the wet mixture to the dry mixture and mix until combined. Transfer the batter to a muffin pan, and bake for 15-20 minutes.

    1. yay! i’m planning on making a variation of your garden cake muffins tomorrow (going to try using mashed butternut squash instead of zucchini, and chia gel instead of eggs)!
