Mmmm, these fluffy scones make a great morning snack!
I mostly followed the recipe I found at Oh She Glows. Here’s what I used and did:
- 1 tablespoon soymilk
- 1 teaspoon apple cider vinegar
- 1/3 cup very strong coffee (I used a heaping teaspoon of instant coffee in 1/3 cup hot water)
- 1/4 cup canola oil
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3/4 cups whole wheat flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon sugar
- handful of chocolate chips
Preheat oven to 375ºF. In a small bowl, mix the apple cider vinegar and soymilk and set aside for a couple minutes until it curdles. In a large bowl, mix together the dry ingredients (flours, baking powder, baking soda, salt, sugar). Go back to your small bowl and add and mix the rest of the wet ingredients to the curdled soymilk (coffee, oil, maple syrup, vanilla). Now add the wet to the dry and mix well. Fold in the chocolate chips.
Scoop ~1/3 cup of batter per scone onto a baking sheet, leaving 2-3 inches between each scone as they will spread out. Bake for ~10-12 minutes until golden and they slightly spring back when you touch them. Makes 6 large scones.
