healthy banana oatmeal mini muffins

Ahoy, guilt-free muffins!

And they’re yummy, too! This recipe was adapted slightly from i heart vegan.

  • 2-3 bananas
  • 1/3 cup applesauce
  • 1/2 cup maple syrup
  • 2 tablespoons soymilk
  • 1 cup whole wheat flour
  • 1 cup oats
  • pinch of salt
  • 1 1/2 teaspoons baking powder
  • 1 tablespoon cinnamon

Preheat oven to 400ºF. Mash the bananas with applesauce, maple syrup, and soymilk. In another bowl, mix together flour, oats, salt, baking powder, and cinnamon. Add the banana mixture and stir to combine. Transfer to mini muffin pan and bake for ~12 minutes, until tops are golden brown. Makes 24 mini muffins.
