gluten-free banana chocolate chip muffins!

It turns out that gluten-free baking is easier than one might think! These vegan gluten-free banana chocolate chip muffins didn’t require any fancy ingredients, other than Bob’s Red Mill GF all purpose flour. And they came out delicious and fluffy, yay!

  • 2 cups gluten-free all purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1/3 cup canola oil
  • 1/4 cup water
  • 2 ripe bananas, mashed
  • ~1/3 cup applesauce
  • 1 teaspoon vanilla
  • sprinkle of cinnamon and nutmeg
  • 1/2 cup chocolate chips

Mix the above ingredients together in the order listed. Transfer to muffin pan and bake at 350ºF for ~20 minutes. Makes ~14 yummy muffins!

      i hope you like them! you can use more bananas and less (or no) applesauce if you want them to taste very banana-y.
