yummy cookie dough oatmeal cakes

Mmmm. These were tasty, easy to make, vegan, gluten-free, healthy-ish…in other words, I am obviously all about these cookie dough oatmeal cakes.

Chocolate-Covered Katie is a fantastic blog with all sorts of delicious recipes along the same lines, but here’s the one for the cookie dough oatmeal cakes. And here’s exactly what I did:

  • 1 cup oats
  • sprinkle of salt
  • 1/2 cup unsweetened plain almond milk
  • 1/2 cup unsweetened applesauce
  • 3 T maple syrup
  • 2T vegetable oil
  • 1/2 tsp vanilla extract
  • Handful of chocolate chips

Preheat oven to 380F. Mix together dry ingredients, then add wet ingredients and chocolate chips. Stir and transfer to muffin pan. Bake for 20-25 minutes. Made 6 muffin-sized cakes.
