hearty marzipan-ish cookies

…I am not good at naming foods, so let me know if you come up with a better name for these cookies. They reminded me of marzipan, and my love for marzipan has been well-documented on this blog  (here and here). These cookies also have some good nutrition going on, with the multi-grain-ness and flax (hi, fiber and omega 3s!). And of course they are yummy, or I wouldn’t be telling you about them!

  • 1/4 cup oil
  • 1/4 cup honey or maple syrup (I used a combination of the two)
  • 1/8 cup brown sugar
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups almond flour
  • 1/2 cup ground flax seed
  • 1/2 cup gluten-free all-purpose flour
  • cinnamon to taste
  • splash of almond milk
  • 1/4 cup rolled oats
  • nuts or seeds or (c)raisins or…

Combine the first four ingredients, then mix in the almond flour, ground flax seed, flour, and cinnamon. I needed to add a splash of almond milk to make the dough moist enough to stick together. Finally, mix in the oats and nuts. Take ~1 tablespoon of cookie dough and roll into a ball. Place each dough ball on a cookie sheet and gently flatten. Bake for ~10 minutes at 325ºF. Makes ~24 hearty cookies.
