spiced chocolate chia cookies

I un-healthified this recipe slightly from here, but I think these are still pretty healthy as far as cookies go. They are soft and chocolatey and just a little bit sweet.

  • 1/2 cup almond flour
  • 1/4 cup gluten-free all purpose flour
  • 1/4 cup sugar
  • 3 tablespoons chia seeds
  • 3 tablespoons cocoa
  • 1/2 teaspoon baking powder
  • 1 teaspoon cardamom
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons melted Earth Balance
  • 2 tablespoons applesauce
  • 2 tablespoons water
  • 1 tablespoon vanilla

Mix the dry ingredients together, then add the wet ingredients to the mixture. Drop spoonfuls of cookie dough onto cookie sheet and sprinkle a little extra sugar on top. Place cookie sheet in freezer to chill for ~15 minutes and pre-heat oven to 350ºF. Bake for ~12 min. Makes 16 smallish cookies.
