But I imposed some portion control on myself by making mini muffins! Aren’t they cute?
I basically used the same recipe as for the chocolate zucchini muffins, but omitted the cocoa powder and added an extra tablespoon or so of flour. I also increased the cinnamon to 1 teaspoon and added 1/2 teaspoon of nutmeg. For mini muffins, reduce the baking time to 10-12 minutes. This recipe makes ~40 scrumptious mini muffins.
