pumpkin spice cloud cookies

These cookies are so soft and fluffy that when I brought some in to share with my officemate, he proclaimed the experience of eating them “like eating little pumpkin clouds.” I love that image, so ever since then, these cookies have a snappy new name. The recipe is adapted from here.

  • 1 cup brown sugar
  • 1 cup canned pumpkin
  • 1/2 cup oil
  • 1 teaspoon vanilla
  • 2 cups gluten-free all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon salt

Preheat oven to 350ºF. In a large bowl, mix together the brown sugar, pumpkin, oil and vanilla. Add the dry ingredients to the mixture and stir until smooth. Drop by spoonfuls onto baking sheet, and bake for 12-15 minutes. Makes about 3 dozen cookies.
