apple spice muffins

Last Saturday we went apple picking in the Annapolis Valley. The weather was gorgeous and the apples were plentiful.

On Sunday morning, I made apple muffins based on Erin McKenna’s blueberry muffin recipe that I found here. These muffins are sooo fluffy and moist and delicious!

  • 2 cups gluten-free all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon xanthan gum
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 cup oil
  • 2/3 cup maple syrup
  • 2/3 cup almond milk
  • 2 teaspoons vanilla
  • 1 apple, chopped
Preheat oven to 325ºF. In a large bowl, mix together dry ingredients. Add in wet ingredients and stir until batter is smooth. Add in apple pieces and stir until they are evenly distributed. Transfer batter to muffin pan and bake for 22 minutes. Makes 12 muffins.
