baked applesauce oatmeal

This baked applesauce oatmeal would be great for a brunch. It’s healthy, so easy to make, and smells heavenly while baking. You could throw in some chopped apple to make it even more delightful!

I adapted this recipe slightly from here.

  • 3 cups oats
  • 1/2 cup brown sugar
  • 1/2 cup chopped walnuts
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup almond milk
  • 3 tablespoons ground flax seed
  • 9 tablespoons water
  • 1/2 cup applesauce
  • 1 tablespoon vanilla

Heat the oven to 350°F and grease a 9″×13″ glass baking dish with Earth Balance. In a large mixing bowl combine the oats through salt. In a small mixing bowl mix the milk through vanilla together, then pour over the dry ingredients and stir until mixed. Scrape batter into the prepared baking dish and bake for ~35 minutes.
