chickpea flour cheez-its

If you ever wished you could make vegan gluten-free Cheez-Its quickly and easily at home, you’ll like this recipe. I made these a little soft and fluffy instead of crispy and flat like the real crackers, but if you’re into crispiness, you can probably chill the dough, roll it flat, and cut the dough into cracker shapes of your choice (like in my inspiration recipe).

  • 1 cup chickpea flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1 tablespoon nutritional yeast
  • 1 tablespoon oil
  • 3 tablespoons almond milk
  • 2 tablespoons water

Mix ingredients together in above order. Drop by teaspoonfuls onto baking sheet, flatten with a fork, and sprinkle with salt. Bake for about 12 minutes at 350ºF. Makes ~2 dozen addictive crackers.
